Antonio Quari is renowned for making authentic, fragrant and elegant vintages, reflecting the personality of the Burgundian wine landscape. He learned all the tricks of the trade thanks to the exciting apprenticeship under Henry-Frédéric. A few years later, he decided to develop his own wines and to highlight the region's terroir.

The northernmost appellation of the Côte de Beaune, Ladoix has brown limestone soils, dotted with flint limestone debris. This is where the fifty-year-old Pinot Noirs from which this wine is based on. Vines grown organically and they are rooted.
Antonio applies the same winemaking techniques as those used at Domaine Prieuré Roch: A wine vinified using whole grapes, spontaneous fermentation with punching down and pumping over by gravity, then ten months of aging in barrels of several wines. The vintage is then bottled without fining or filtration and with very low doses of sulfur. Antonio only produces this fresh and delicate wine in small quantities. The lucky ones will be able to discover a subtly spicy bouquet of crushed strawberries, a full and deep mouthfeel, of great elegance. Antonio Quari is keen to collect grapes grown using sustainable and ecological practices. Unsurprisingly, this healthy philosophy continues in the cellar. The vinifications are also minimally interventionist and sulfur is added in minimal quantities in order to let the fruits freely express all their delicious aromas. It is in this harmonious context that the house offers unique vintages, perfectly reflecting the terroir and grape varieties of the region.
